Salted Pastry Course (Savoury Pastry Class)
20-21 Oct 2025 | Alejandro Luna & Jonny Pisanelli
The first masterclass will be a bit unconventional — even if we will deal with pastry, sugar will not have its place in it. We will focus on laminating the dough with butter to make our own croissant and puff pastry, but everything we bake will not be the least bit sweet. A total of up to eighteen different products! From croissant dough it will be, for example Ham & Cheese Croissants, Reuben Croissants with pastrami and sauerkraut, Egg & Tomato Danish, but also a croissant sandwich Danwich with pesto and burrata .From puff pastry for example bags with chorizo and potatoes, Mushroom Galette and great Sausage Roll. We also knead breaded pâté and together we will prepare the traditional Quiche Lorraine. In addition, we will learn Olive Oil Brioche, pretzels and as a bonus -- great australian Chunky Beef Pie!
Sourdough Bread Course (Sourdough Bread Class)

Learning to bake bread with natural sourdough is not difficult, but the real challenge is especially on a professional level — and this is where Bernardo, with his experience, is the right person in the right place. During the two days we will focus on sourdough and especially the long and slow fermentation of bread doughs. Except sourdough bread we learn to prepare as well baguettes, ciabatty and focaccia and the increasingly popular Japanese toast Shokupan. And since Bernardo arrives from Mexico, the surprise will also be mysterious Pan de Muerto.

Christmas is here! Are you lacking ideas on how to reach out to confused customers this year? This masterclass is just for you. We learn Panetone — the most popular Italian delicacy, which is slowly gaining popularity in our country. Come learn the right version, whether classic, with chocolate or maybe poppy seeds. You know Pandoro? A holiday cake that lasts a long time and pleases both grandmother and aunt, great Kougelhoupf or swaddled stole. Everything prepared from Lievito Madre.
